Every bit tempting, the sweetness of our Dock On The Bay BBQ sauce punctuates the sharpness of the melted “Blue Lava” Blue Cheese

When having this treat, surrender to the moment, enjoy the savoriness, for tomorrow brings a ten mile run, lol!


  • 1.5 to 2 lbs prime choice ground beef, 85% to 80% leanIMG_20180616_201424585
  • 1 packet of onion soup mix, dry
  • 2-3 tbsp McCormick’s Steak Seasoning
  • 3 stalks green scallion diced thin
  • 3 tbsp of the Chicken Thief Kitchen’s Dock On The Bay BBQ Sauce (or another carolina based bbq sauce of your choice), reserve more for a drizzle
  • 6 to 8 ounces blue cheese, fresh, crumbled
  • Sliced red onion, vine ripen tomato, arugala lettuce
  • Sliced Onion or Kaiser rolls

Serving: an 8-ounce patty burger, recipe makes approximately 6 burgers


  1. 1 hour prior to cooking mix beef, onion soup mix, seasoning, IMG_20180616_203403351scallions and bbq sauce in a large mixing bowl (insight- use your hand as an open “claw” and turn the meat, dont over mix)
  2. Form about a 7 ounce patty and depress  the center, place about 2-3 ounces of blue cheese in center, cover with 1-ounce of beef, reform the patty into a ball and flatten into a 1/2 to 3/4 thick patty
  3. Place each patty on a parchment paper lined sheet, set in the fridge for about two hours
  4. Before cooking, prepare your grill surface by cleaning, then oiling, heat to 350°F (outside grill) or heat an oiled grill plate on the stove top over medium-high
  5. Remove the patties from the fridge about five minutes before cooking
  6. Grill each side of the patty(s) approximately 4-5 minutes till a medium char is visible
  7. Remove each patty to a sheet, tent with tinfoil to keep warm
  8. On an onion or kaiser roll prepare a bed of arugala lettuce, place a patty on top, top the patty with sliced red onion, tomato and a drizzle of our Dock On The Bay BBQ Sauce (or your crowd pleaser in the meantime)

Plate with your favorite sides, we platted with crunchy sweet potato fries, seasoned steak fries and a Tuscan Tortellini  Salad
