Italian Pesto-Grilled Cheese Sandwich

This is a quick and easy twist to a traditional grilled cheese, using some Italian inspired tastes.  Want to add a little zest to that Grilled Cheese, try this one out!

Ingredients: (makes four sandwiches)

  • 8 slices of a good three cheese semolina bread
  • 8 slices of Pesto-Parmesan crusted ham
  • Approximately 8 slices of a sharp cheddar cheese (we used Murray Bridge Australian Sharp Cheddar, the one ingredient not Italian besides the butter)
  • Approximately 8 slices of an Italian Fontina Cheese (we used Boors Head Fontina)
  • Pesto spread (see recipe soon to be posted, or use a favorite store bought brand to make the evening simple)
  • Unsalted spreadable butter

Cooking Directions:

  • Place a medium saute pan or grill pan on medium heat
  • Spread about a 1 tsp of pesto spread on the interior portion of both slices of bread
  • Place 2 slices of Sharp Cheddar on one slice of bread, onto the pesto spread
  • Places 2 slices of the Fontina on one slice of bread, onto the pesto spread
  • Halve the ham slice and place each half over the cheeses on the two slices of bread
  • Butter the exterior halves of bread and place in the pan, buttered side down
  • Brown till slightly golden, flip one half of the sandwich carefully onto the other half, continue to grill until the two halves reach a darker golden color
  • Place each sandwich on a baking sheet, once all the sandwiches are grilled, place the baking sheet into the over (heated to 200 degrees) for about ten minutes to melt the cheese

Plating Directions:

Cut the sandwiches along the diagonal to create two halves, serve with the interior open to the patron.  Match with a hearty soup, like our Turkey Tortellini Soup or a Hearty Country Tomato Soup.
